Carotino Recipes

Hot and Spicy Spaghetti
Ingredients:
125 g (4 ½ oz) spaghetti
450 g (1 lb) chicken, cubed
¼ teaspoon salt and 1/8 teaspoon pepper
1 egg white
1 teaspoon corn flour
2 to 3 tablespoon Carotino oil
12 dried red chilies, deseeded and soaked
1 onion, quartered
110 g (4 oz) green pepper, sliced

Sauce:
1 tablespoon light soy sauce
1 tablespoon premium oyster sauce
1 teaspoon sugar
1 tablespoon malt vinegar
1 teaspoon sesame oil
½ teaspoon chicken stock granules
4 tablespoons water

Garnish:
50g (2 oz) cashew nuts or peanuts, toasted

Method:
Bring water to boil in a deep saucepan. Add spaghetti, Carotino oil and a pinch of salt. Cook for 9 to 10 minutes, or until slightly softened. Season the chicken pieces with salt and pepper. Dip seasoned chicken in egg white, then coat with corn flour. Deep-fry chicken in hot Carotino oil for 2 to 3 minutes until golden, then drain. Heat Carotino oil in a wok or frying pan. Stir-fry dried chillies over a gentle low heat until you can smell the chilli. Add in onions, pepper and sauce ingredients. Mix well and cook until sauce is thick. Add the chicken pieces. Dish out into a large mixing bowl.

Add spaghetti and toss it thoroughly. Arrange dish on each individual serving plate and serve with garnish.
