Carotino Russian Salad
Ingredients:
300 g (10 oz) carrots 300 g (10 oz) potatoes 110 g (4 oz) peas 2 eggs (hard boiled) 225 g (8 oz) cooked ham 225 g (8 oz) cooked chicken breast 110 g (4 oz) gherkins 1 lemon Pinch of salt. For Mayonnaise: (A) 125 ml (4 fl oz) of Carotino oil ¼ teaspoon salt and pepper ¼ teaspoon mustard powder ½ teaspoon sugar ½ tablespoon vinegar 1 egg yolk (B) 1 tablespoon of tomato sauce 1 tablespoon of chilli sauce 1 tablespoon honey Method: For the mayonnaise: Put (A) in a blender and blend for a few seconds until thick. Pour in oil gradually and continue blending till 60 ml (2½ fluid oz) of oil is used. Add vinegar and continue adding oil until it has been used up, then add (B). For the salad: Boil or steam the root vegetables separately. When cold, cut into small, bite-sized pieces. Cut up the eggs, chicken, ham and gherkins, then cover them with the mayonnaise. Now add the salt, pepper and lemon juice to taste. Serve with lettuce and tomatoes. Tip: If the mayonnaise becomes curdled, break another egg yolk into a clean bowl and slowly add the mayonnaise. Serves 4 |
