Carotino Recipes

Carotino Easy Fruit Cake
Ingredients:
350 g (12 oz) mixed dried fruit
110 g (4oz) caster sugar
75ml (3 fl oz) Carotino Oil
150 ml (¼ pint) water
1 large egg
225 g (8 oz) self raising flour

Method:
Heat the oven to 150 °C (Gas Mark 2.) Grease a baking tin. Place fruit, sugar, Carotino oil and water in a pan and warm it gently. Allow to cool a little, then add beaten egg and stir in flour. Pour into the prepared tin and bake for about 1½ hours.

Tip:
For extra flavour, you can pour a tablespoonful of brandy or rum over the cake while it is still warm.
